Sometimes there not much you can do with hard side winds except slow down or just get out of them.

However, there might be something to be said for using the right truck. The loaded pin weight on that trailer is around 3000 lbs. Add people and gear and that truck is probably WAY overloaded. What is the posted payload in the drivers door jamb of that truck?
I don't know how much better a 1 ton would have helped in strong cross winds but it likely would have been better. If the springs weren't having to manage the 1000 + lbs overage they might have better helped to stabilize the load in those high winds.

Still, there are those times when you just have to throw in the towel and get out of it for a while.
