Option 3 for me are LTs and concern there is clearance between tires and also top of tire to floor. Right now I have 5” between tires and 3 1/2” from tire top to floor
Is that valid and any other concerns I should have? The distance between axles is 35”.

Our rig is is a 2015 High Country HM318RE.

I cant see any reason for replacing your OE tires with another size. I'm guessing your trailer has 5200# axles. The minimum tire requirement for those axles is, yup! 5200#. Your current tires are providing 6840#, when properly inflated to 80 PSI. Does your certification label recommend 75 PSI?

You're not going to find ST tires with a mileage rating. They are age out tires. You're already running the only USA made trailer tires.
