Are you also running the ceiling fan? if yes, try changing the direction of your ceiling fan. Heat rises, it may help mix the air better to help thermostat detect the temp more predictably. This works for us when we are on the HP or furnace. Not as much an issue when on A/C because cool air drops toward the floor.
