Gravity Fill Fresh Water
I have a 2023 Montana High Country and can not find the gravity fill, It said to remove the gravity fill cap which is no where to be found. Any help would be great

I can’t speak to the 2023’s, but the older units have a cover over the fresh water overflow port that you can slide up to remove and then add water there.

Just hook up to city water in your convenience center and then turn the City/Fill valve to Fill and water will fill your fresh tank. When water spills out the fresh tank vent, your tank is full. Turn your valve back to City and you are good. This is a photo of our valve, even though they still installed gravity fills on the older rigs. NORMAL FLOW is the city position for normal water to the rig, and FILL is the position that directs water to the fresh tank. Not sure what the label looks like on the newer rigs.

You did not mention your specific model RV - but in the screen shot below I have highlighted the fresh water tank overflow vent. I have never done it on my unit - but I believe this vent is removable. Maybe others can clarify whether or not you can use this port for any sort of access to the water tank.

The over flow "vent" really cannot be used to "fill" the fresh water tank. Why? Because if you attempt to insert anything into that very small-in-diameter tube you will create a vacuum. There's nowhere for air to escape and you'll never "fill" the tank that way. Some air may escape out same tube, but it will probably come shooting out under pressure first.
As rohrmann said above, flip the valve to "fill" then flip it back when done.

Older models had an actual gravity fill tube and cap. Maybe they just haven’t updated their manuals.

How to fill Montana water tank from external non-pressurized source
I built a 12v pump from an RV pump to move water from my 6 gallon cans to the RV water tank. I put the valve in the "tank fill" position and run the pump. We do a lot of national forest camping and this allows us to put in additional water.
Here is a picture of what I built in it's storage container that I keep in the RV basement.

If you have a winterizing port you can use the RV pump to suck the water out of the water jug. Attach a hose from the outside shower to the tank fill port. I learned this from the MOC experts!

Same idea as the gravity fill bag on the roof. ... My solution for my Keystone Outback, which was a gravity fill enterprise:
Pump purchased from Lowe's Home Improvement (120 v. AC) and I use a 400 watt inverter in the truck if I don't have shore power.
Tank: 35 gallons from Tractor Supply Company (TSC).
The same system works well with my Montana that has to be filled with a garden hose under pressure:
