They are called Crayfish by proper folks - but in the south they are called crawfish or crawdads. They live in creeks and rivers and wet bogs. I had no idea they were as far north as DutchmenSport either. In Louisiana and southeast TX they have Crawfish festivals and Crawfish boils. They taste like boil shrimps - but they are much smaller. Frankly - it's too much work for me to enjoy eating them. "Suck da heads" and all that stuff...not for me.

There are many varieties of crawfish (or crayfish). Some live entirely in the water. That particular one is a red swamp crayfish, often called a mud bug. They dig holes in muddy areas, even roadside ditches that often stay damp. The top of the hole is above the water line, but water is just beneath the surface.

As kids we used to tie a piece of bacon on a string and lower it in a hole, wait a few seconds, then very slowly pull the crawfish out. Once they got the bacon clamped in a pincher they were reluctant to release it. And you sure didn’t want to make the mistake of letting one clamp down on a finger. One time and you learned a lifetime lesson.

In the benchrest shooting world there is a shoot in LA called the crawfish. There is one in PA calling the hog roast. Guess what is served for a dinner at these shoots.
We have crawfish here in western Virginia in the creeks. Just enough to fish with.
