Dometic Thermostat Mind of it's own ?
So we've got a 2019 Montana 3721RL and recently our thermostat when set to call for heat will not only start the furnace but the rear roof top a/c unit kicks on same time. In fact the rear a/c unit doesn't appear to cycle the a/c at various temps when cooling. Anyone else experience the same nonsense ?

Now is a great time to upgrade to the digital touch screen Micro Air thermostats. You can control them with your phone off bluetooth or wifi. One of the first upgrades we did on our 2019. We were having problems with the factory ones too.

The Dometic Thermostats are known to be glichy. It's possible that the Tstat isn't root cause of your current symptoms but it could well be. One thing to try is to remove the cover and then operate it. May or may not help but some have said that it works better. If it does then you know it's the Tstat.
As Bartman said, maybe just bite the bullet, as many of us have, and get the MicroAir Thermostat. A little spendy, sure, but I haven't regretted getting one. So much better and easier to use.

Cycle through the thermostat and make sure you do not have it set to "fan", but it is set on Auto. When you have it set on "fan" first, and then turn the furnace on, the AC will continue to blow also. Although, it's just blowing air, not actually cooling.
If you flip it to AC then, the fan will continue to run and the AC compressor will cycle on and off. It's designed to do this.
So, make sure you are in the "Auto" setting an not "Fan" setting. See if that helps. If not, we'll go to "Step 2" next.

Those thermostats have a foam insert used for the keys. Over time they deform and make contact causing all kinds of wonky problems. Upgrade!

Sounds like it just needs a thermostat reset.
Press the “+” button and, while holding it, also press and hold the On/Off Mode button for three seconds. LCD will show ― ― . Press the On/Off Mode button again to turn system on. This may cure your problem
