Meatloaf anyone???
Not every meatloaf is the same. Some is pretty good, some is just way-to-much over the top. If looking for an easy recipe for meatloaf, here's something you might consider trying.
I grew up with my mother making meatloaf using bread, ketchup, some onions, peppers, and a whole bunch of stuff I never liked.
When I got married, my GREAT wife listened carefully to my requests and left out all that "green" stuff. I don't mind chopped fine onions. It was better.
Then one day, I had someone else's meatloaf and it was an ... "oh my gosh!" moment. Instead of using bread, they used crackers, actually, crumbled Ritz crackers. That lasted for a few years.
Then one day I had meatloaf made with quick Oats (1 minute Quaker Oatmeal), and a Star was born!
One step further ... camping last week in North Carolina as the camp host and it was HOT outside. We decided to try something different with meatloaf this time, and this is what we ended up doing ... it was beyond our wildest expectations... very simple:
1 pound 15/85 lean hamburger
Finally chopped onions (as many as you want)
pinch of salt
1 egg
Quaker quick oats (Oatmeal)
and .... INSTEAD of tomato juice or ketchup ... ok, get ready ...
add a small amount of Sweet Baby Ray's BBQ sauce!
This will make a really nice helping for 2 people.
Now, kneed and mix all that together and put in an aluminum pan, and put that aluminum pan in an electric skillet with a lid. Put a small amount of water in the bottom of the skillet .... not in the aluminum pan.
Medium heat and let the meatloaf bake until done. When done, pour a little bit of that BBQ sauce on the top of the meatloaf and put the lid back on for a couple more minutes.
OMG! You'll never do it the conventional way again.
Now.... if you really enjoy all that rabbit food chopped up in your meat loaf, that's OK, But try it with oatmeal as the filler and BBQ sauce instead of a tomato base. .... ok ... just try it! See what you think.

Try it with chili sauce, pinch of brown sugar instead of catsup or barbecue... awesome!

My mother always put some oatmeal in our meatloaf. We didn’t have a lot of money and that made it go further.

My DW makes it with a 50/50 blend of lean hamburger and Italian sausage with BBQ sauce.

My wife likes to experiment with her meatloaf and rarely makes it the same way too many times. Catsup, BBQ sauce, chili sauce, ….. And after all these years she has yet to fail to turn out a very good one.

I don't really have a recipe either. I use hamburger meat, onions and celery (and sometimes peppers) chopped finely. Season with seasoning salt, garlic salt and pepper. One egg and either oatmeal, crushed crackers or Panko bread crumbs and Sweet Baby Ray BBQ sauce and grated cheese (a huge handful)
. Mix, put in aluminum pan and put on our pellet grill for approximately 35 minutes, covered. Remove cover and cover with Ketchup and brown sugar and a little mustard. Spread over top and bake for approximately another 10-20 minutes

Ever try cooking your favorite recipe meatloaf out on a wood burning grill and smoking it in lieu of baking in an oven? Straight up - makes my mouth water and considering smoking one this afternoon! Amazing improvement in taste. YMMV Let me know if you try this
