Hot Water Tank replacement

I have a question. We purchased our Montana 3665 used. Great RV. The only thing is that the people we purchased it from switched out the RV hot water tank for a small electric Home use one. We want to put an LP/electric RV hot water tank back in. How difficult would that be? I was considering the tankless, they removed the unit but left the wiring. We would like to Basically install a complete new system not just replacing it. Can we do it ourselves or would it be better to get done professionally which I know will cost.
