You can use any counter top, cutting board, or anything to make the extension with. It's all a matter of what you want, how much you are wanting to spend, and how difficult it is to acquire it. For us, the butcher block style cutting board was easiest and lest expensive. It still looks good, is very functional, and has held up very well.
What you do need are the fold-down shelf brackets. Wall Mart has them on line (as low as approx $10.00) as does Amazon ($24-$36).
Again, these come in different lengths. Your set-up will be unique, so you need to make sure you have something solid to screw into for the brackets, or attach a backer board inside the cabinet the screws will go into. Otherwise, try to hit the framing studs for the cabinet. Again, start with the actual board, or "extension" you are wanting to use, and go from there.

Adding one of these is really very easy, and the end result (functionality) is priceless! It definitely was one of the better modifications we made on our camper.
