The fresh water line has a valve that kinda looks like a radiator pet cock, and the blue drain one has a grey plastic fitting that is crimped at they end with no cap. It looks a little smaller than hose threads I will have to buy a couple of sizes caps since I can't bring it with me. Thanks for the tip

PS: It is eye opening how handy you have to be even though everything is new to live the RV life. No regrets just eye opening

Yeah it is not garden hose threads. The pipe should be 1/2 inch pex, so it is likely 1/2 inch NPT. You definitely have to keep the handyman skills up.
My fresh drain didn't come with a valve. Just a screw on cap. I piped it to the edge of the ODS rear side and put a small barb 1/4 turn valve on it. If you have a pex crimper, it's an easy fix. Or you could get shark bite fittings instead.

Valve like that should work well. Not sure if 1/2" iron pipe would thread on though. Threads may not match.

We have a 2017 3791 RD. Ours is under the pantry on the bottom, plus there is another valve under the kitchen sink.

The way they plumb this is there is a line that runs from under the sink to the ice maker. There is a shut off under the sink where you would shut it off to winterize. Then there is a valve where the line changes from pex to 1/4" tubing that runs to the ice maker. That can generally be left open. If the refrigerator is in a slide, they put a low point drain under the unit to drain that line when winterizing. This way you avoid putting antifreeze in that line.
I also ran pex tubing to the ODS with a shut off to avoid crawling under the rig to drain that line.
